Vegan Island Cuisine with no Compromises
Seems obvious. Properly prepared, anything we eat can be an elevated experience. But our personal experience doesn’t reflect that. It’s almost the reason we opened a restaurant: to feed our bodies and replenish the parts of our spirit that life seems to chip away at. Eating plant based goes way back for us. The experience doesn’t always match our expectations. The most consistent experience takes place in temples of spiritual practice. Because these practices predate the birth of Christ, these temples are much easier to find in the East than here in the West. Having plant based foods prepared by ascetic monks is an experience in itself. While preparing temple food is an option, it isn’t always practical and thinking outside of the box becomes necessary. Processed foods like Oreos are well known vegan options, but there has to be a happy medium between that and your average side salad. Fortunately, island cultures have a long history of plant-based cooking, and, without compromising the culinary experience.
